Classic Veggie Noodle Soup (Vegan + Gluten-Free)

HEALTHY NOODLE SOUP?! YES PLEASE!

This vegan noodle soup recipe is dedicated to everyone who lives in a cold place! I live in Florida where it is always sunny and warm so I need to warm you guys up! Noodle soup is typically made with chicken and chicken broth but this soup is totally meat-free and plant-based. However, it is still just as delicious as when your mom used to make it! This has all of the classic noodle soup flavors that are so warming, comforting and much needed in the cold weather. Doesn’t it sound so nice to cozy up with a bowl of soup, a warm blanket, and watch a good movie? Sounds like a good plan to me.

I used quinoa pasta in this recipe which makes this soup vegan and gluten-free. My favorite quinoa pasta is the one from Trader Joe’s. It has the perfect texture for noodle soup and most closely mimics egg noodles or white pasta. If you don’t want to order those ones, here’s another option. Feel free to use whichever noodles you like, these are just the ones that I use and love. In terms of servings, this makes a lot of soup so it is great to feed a whole family, or to meal prep and keep in fridge for the week.

Growing up in a Jewish family, one of my favorite things in the world was having my mom’s noodle soup (hi mama!). This brings back memories of my childhood and of my mom’s amazing cooking. I am so happy to share this healthier version of noodle soup with all of you!

I don’t want you to feel deprived! Healthy definitely does NOT have to be boring! I think there is a huge misconception, especially if you’re vegan, that the food is unappealing or bland, but I am here to show you that is far from the truth. If you’re experimenting with a plant-based lifestyle and want to impress your family members, you should make this vegan noodle soup for them!

One of the best ways to eat healthier is to add greens to every meal, and it is so easy to add it to this vegan noodle soup!. Throw some spinach in this soup for added vitamins and minerals. Spinach is high in antioxidants, iron and #plantprotein! I would highly recommend adding spinach to this soup.

Classic Veggie Noodle Soup (Vegan + Gluten-Free)

This delicious veggie noodle soup is warming, comforting and the perfect meal for a cold day. It is vegan, gluten-free and is great for someone trying to stick to a healthy lifestyle.
prep time 5 minutes
cook time 20 minutes
total time 25 minutes

the ingredients

  • 2 cups chopped celery
  • 1 cup chopped onion
  • 2 cups chopped/sliced carrots
  • 1 cup roughly chopped parsley
  • 6 cups veggie broth
  • 2 tsp dried dill
  • fresh spinach optional
  • pasta add as little or as much as you'd like to the soup
  • 1 tsp salt
  • pepper to taste

instructions

  • Add the onion, celery, carrots, parsley, veggie broth, salt, and dill to a large soup pot and bring to a boil. 
  • Once boiling, cover and simmer on low-medium heat for 20-30 minutes until the veggies are cooked through. 
  • While the soup is cooking, make your pasta in a separate pot then set aside. Do not cook your pasta in the same pot as the soup it will make the soup starchy.  Make as much or as little pasta as you want. 
  • Once pasta is done, rinse and drain. 
  • Add pasta to the soup when the soup is done cooking, and add in fresh spinach if you'd like. 
  • Serve and enjoy!
