BBQ Chickpea Tacos (vegan, oil-free)

BBQ chickpea tacos are here and omg your mind is going to be blown! I can’t believe how amazing these turned out.

The smokiness and sweetness from the bbq sauce, the creaminess of the sour cream, the heartiness of the chickpeas and crunch of the cabbage truly make these tacos a flavor bomb.

I am so excited to have teamed up with Mother Raw for this recipe blog! I have been a fan of their bbq sauce for a while and I knew I had to make a recipe with it.

If you’re a loyal HealthyGirl recipe follower you know my recipes are simple and quick. I literally made these restaurant level tacos in under 30 minutes. Whether you’re a newbie to plant-based cooking or just need some new fun dinner ideas to spice things up, this recipe for bbq chickpea tacos is a must-try!

Aside from prepping the veggies and making the sour cream, all you have to do is simmer the chickpeas with the bbq sauce for 10 minutes…that’s it!

Assemble the Tacos!

Once the veggies are prepped and the chickpeas are ready, start assembling your beautiful vegan tacos. You don’t need meat to make a protein-rich meal. Chickpeas a great way to get your protein, fiber and vitamins.

BBQ Chickpea Tacos

The sour cream takes about 10 minutes to make and its 100% worth it. Made from cashews instead of dairy, this sour cream is way healthier for you. In addition, it adds the perfect amount of coolness + creaminess to the bbq chickpea tacos and is very complimentary of the bbq sauce.

Cilantro ties the tacos together…let’s be honest, you can’t have an authentic taco night without cilantro. Fresh herbs are a great addition to any meal and add such a nice brightness to the recipe.

Also, there is a common misconception that cooking vegan food is more expensive. This is totally not true!

This is a very affordable meal to make for the whole family, for your friends or for date night with your partner. Chickpeas are WAY cheaper than meat. Cabbage, corn, and cilantro are also some of the cheapest veggies you can buy at the market.

BBQ Chickpea Tacos

Easy vegan bbq chickpea tacos are plant-based, gluten-free, 100% WFPB and are super simple to make. Total flavor bomb!
total time 30 minutes

the ingredients

  • 1 can chickpeas drained and rinsed
  • 1 bottle Mother Raw barbecue sauce it's sweetened with dates
  • corn tortillas
  • avocado slices
  • fresh steamed corn cut off the cob
  • shredded purple cabbage
  • fresh cilantro
  • cashew sour cream
  • lime
  • salt + pepper to taste

instructions

  • Prep your veggies by slicing the avocado, steaming corn, shredding cabbage, washing/chopping cilantro and making the cashew sour cream. 
  • Add chickpeas to pan with Mother Raw bbq sauce and simmer for about 10 minutes on medium/low heat.
  • Grill tortillas in a pan on high heat for about 30 seconds - 1 minute on each side. Careful not to burn. 
  • Assemble the tacos, season with salt + pepper, squeeze lime over top, and enjoy!
